People looking over my shoulder were shocked to see complex formula seeming to pop onto the screen as the prof wrote them on the board. With LO you can enter complex formula (calculus and eng formulas) almost as fast as you can read them. I could be in a class taking notes in LO and the prof would start a long string of formula on the board. However, when I was at Uni for Eng, LO always shocked my classmates. I haven't had as much luck with creating macros and such in LO but I also haven't had a need to look into it yet. The big area where excel, well, excels, is in programming. There always seems to be a way to do what I want in LO but I can't find a way to do it in WORD/EXCEL, etc. While I agree that Libreoffice might not be the prettiest UI of the bunch, after having tried many of your listed alternatives, as well as Microsoft Office standalone, I always come back to LO for my work.

I am not saying customizing LO will solve the problem, it is already far superior and has features that no standard MS user would ever use but features like Excel Macros, key bindings don't quite work well. I have used Office 2013 icons (2019 are available?) and MS like colors.
